BAKING AND PASTRY ARTS I
Grades 10-12
Certification: Safe Food Handler Prerequisite: Nutrition and Food or Family and Consumer Science
This is a career preparation class offering an opportunity for an in-depth look at baking and pastry. At school, students learn the basics of the food service industry which include careers in baking and pastry, professionalism, safety and sanitation, tools and equipment, basic baking principles, structure of a recipe and menu, and preparation techniques. The students learn from a specially designed curriculum that emphasizes work-based learning experiences that prepare students for careers in high-wage, high-skill fields. The class provides catering for various school events. This course is recommended for anyone interested in the culinary field, hotel and restaurant management.
NUTRITION AND FOOD/ADVANCED NUTRITION AND FOOD
Grades 10-12
Certification: Safe Food Handler
This course explains the relationship between food and health and how nutrients and nutritious meals are important to healthy growth and development. Food safety is emphasized, and students are prepared for the ServSafe Food Handler industry-based certification. The course also introduces students to basic food preparation techniques, and introduces entry-level job opportunities in the food and nutrition related fields.
PROSTART I
Grades 11-12
Certifications: ServSafe Food Manager and ProStart Level 1
Prerequisite: Nutrition and Food/Advanced Nutrition and Food Dual Enrollment opportunity, but not required.
This course is a national two-year program that prepares students for careers in the restaurant/food service industry. Topics covered include customer service, food and kitchen safety, foodservice equipment, nutrition, business mathematics, control of foodservice costs and career preparation and development. Advanced food preparation techniques will be taught and students will be prepared to sit for the National Restaurant Association ServSafe Food Manager and ProStart Level 1 industry-based certifications.
PROSTART II
Grades 11-12
Certification: ProStart Level 2
Prerequisite: ProStart I Dual Enrollment opportunity, but not required.
This class can be taken as a one hour or two hour block. Year two of the ProStart program prepares students for careers in the restaurant/food service industry. Topics covered include career preparation and development, the history and art of foodservice, the lodging industry, marketing and menu development, purchasing and inventory control, standard accounting practices, tourism and communication with customers. Students will be prepared to sit for the ProStart Level 2 industry-based certification.
